With just six weeks to go until our Chefs’ Dinner at Rudding Park, we caught up with chef Tim Allen of [1 Michelin Star] sō-lō Restaurant to hear more about his dish and why he's looking forward to cooking at our dinner.

Tell us about yourself and restaurant

After many years of running other’s restaurants, this was my first solo venture, so the name sō-lō seemed very fitting. The restaurant is about being able to enjoy great high-quality food, provenance is key to the menu, but in a relaxed, laid-back environment. We want our customers to feel that they’re having fun, and it’s important that everyone feels welcome.

Tell us about the dish you’re cooking at our Chefs’ Dinner

I will be preparing the starter, so I wanted to cook something that was punchy but light – to get the audiences taste buds going. My dish plays with temperature, both hot and cold, and marries earthiness with sweet. Techniques range from salt-baking to compression and creating gels. This is a popular dish at sō-lō and so we know it’ll be a hit with those attending the Chefs’ Dinner.

Why are you supporting Hospitality Action and what prompted you to join our brigade at Rudding Park?

I’ve gained so much throughout my own career in hospitality that I’ve now reached the stage where I’d like to give back. I’m humbled that Hospitality Action asked me to cook at their dinner, and I encourage everyone to book their tickets to support our industry.

Our Chefs' Dinner, hosted by Stephanie Moon of All Things Food, will take place at Harrogate’s stunning, five-star award winning Rudding Park. Chefs Adam Degg of FIFTY-TWO at Rudding Park, Ruth Hansom of Hansom Restaurant and Wine bar and Nigel Haworth of The Three Fishes will join Tim Allen to complete our chef line up.

Guests will be treated to a drinks and canapé reception and four course meal with wine throughout, whilst having the opportunity to join in a live Q&A with our chefs.
